Spicy Feta Spread.

This is a versatile spread great on its own with pita or as an accompaniment with lamb or chicken kebabs.


  • 8oz feta cheese
  • 1 red pepper
  • 1/8 tsp of red pepper flakes (more if you like heat)
  • 1/2 tsp oregano flakes
  • 2 tbs olive oil plus 1tbs for the cooking sheet
  • salt to taste

Now Cook:

1. Heat the oven to 400 degrees F.

2. Lightly oil a cooking sheet with some olive oil and place the red pepper sideways so the stem points sideways.

3. Cook for 20 minutes. Turn and cook for another 20 minutes until the pepper is nicely charred.

4. Remove from the oven and let cool. Remove the stem and seeds.

5. Now place all the ingredients into a blender and give a quick blend till the mixture has the consistency of a spread. Depending on the feta used, you may want to add a bit more olive oil until it reaches a spreadable consistency.

6. Serve with toasted pita or as an accompaniment.
