Pecorino Lemon Dressing.

Great as a salad dressing but also can be used over potatoes, fish etc.


  • Dash of Salt
  • Mixed greens
  • 1/3 cup champagne or high quality white wine vinegar
  • 1/8 virgin olive oil
  • 1 tsp dijon mustard
  • 1 clove garlic smashed
  • 1 medium shallot finely diced
  • 2 anchovies
  • 1/2 tsp dried oregano
  • 2 tsps high quality grated pecorino romano cheese
  • juice of half a lemon
  • 1 tbsp of hot honey
  • freshly ground black pepper

Now Cook:

1. Place the salt, garlic and anchoivies in a bowl or mortar and mash to a paste.

2. Add mustard, pepper, oregano and shallot.

3. Add vinegar, oil, lemon juice, pecorino and hot honey. Stir and chill for up to six days. When ready to use, pour over mixed greens
