Superbowl Chili.

Best made the day before Superbowl.

Note: This is a two type Chili. Mamma's Boy for those who like milder and Bad Boy for the rest of us.

INGREDIENTS: Serves 8-10

    For both Mamma Boy and Bad Boy

  • 6 lbs lean ground beef
  • 1 Vidalia onion
  • 4 garlic cloves
  • 250g of spicy chorizo
  • 3 19oz cans dark red kidney beans
  • 1 680ml jar of Pasata (strained tomatoes)
  • 1/2 cup chili powder
  • 1/2 cup ground cumin
  • 1 tbs dried oregano
  • 1 tbs dried thyme
  • 1/4 cup Worcestershire Sauce
  • 1/8 cup (1oz) Tobasco sauce
  • 1/2 cup dry red wine
  • 1/2 cup beer
  • 1/4 cup of Supernova smokey chipotle sauce
  • 1/4 cup cider vinegar
  • 1/4 cup balsamic vinegar
  • 1/4 cup molasses
  • 1/4 cup HP Sauce
  • 1 tsp dry mustard
  • 1 tsp Barberian's Steak Seasoning
  • 2 chipotle peppers in adobo sauce, finely chopped
  • For Bad Boy

  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1/8 cup (1oz) Tobasco sauce
  • 1/4 cup dry red wine
  • 1/4 cup beer
  • 1/4 cup chili powder
  • 1/4 cup ground cumin
  • 1 tsp chipotle crushed peppers

Now Cook:

1. Cook the ground beef in batches in a frying pan and set aside in a bowl. Keep the grease.

2. Transfer the grease to a pot and heat to medium.

3. Chop the onions into small pieces and mash the garlic using a garlic press.

4. Fry the onions for 5 minutes in the grease until Translucent. Add the garlic and cook for another 2 minutes.

5. Lower the heat and add the chili powder, cumin, mustard, oregano and thyme. This will form a dry paste and stir for 30 seconds so it doesn't stick to the bottom of the pot.

6. Add the Worcestershire Sauce, Tobasco sauce, beer, wine, cider vinegar, balsamic vinegar and Supernova smokey chipotle sauce. Stir to combine.

7. Add the molasses and stir into combine. Then add the HP sauce and the chipotle peppers in adobo sauce and stir.

8. At this point you should have a thick paste that's barely simmering. Add the Pasata

9. Cut the chorizo into bite sized pieces and add.

10. Add the ground beef and stir to combine.

11. Add the drained Kidney beans and stir to combine.

12. At this point, you're Mamma's Boy is good to go. Put some of the chili in another pot for those who don't like spice.

13. Add the the additional Bad Boy ingredients and stir. Let cool and refregerate overnight.

14. On game day, heat and tweak taste if necessary.

Hint: Serve with Ceaser Salad and toasted garlic bread.
