Strawberry Shortcake.


My mum's strawberry shortcake.



INGREDIENTS: Serves 4-6

  • 1 1/2 cups of flour
  • 2 1/2 tsp baking powder
  • 1 tbs sugar
  • pinch of nutmeg (IMPORTANT)
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1/3-1/2 cup of milk (if using 2% make half with coffee cream)
  • melted butter
  • 1 quart plus of fresh strawberries
  • 1 quart whipping cream

Now Cook:

1. Sift together flour, baking powder, sugar, salt and nutmeg.

2. Blend in butter with pastry blender.

3. Add enough milk to make soft crumbly dough.

4. Divide the dough in half. Roll out to 1/2 inch thick and put each half in a greased pie plates.

5. Bake for 15 minutes at 450F until golden brown.

6. Crush half the strawberries using a potato masher and add sugar to taste.

7. Brush the crust of one of the cakes with melted butter and add 2/3 of the berries.

8. Place the second cake on top of the first and again brush with melted butter.

9. Add the remaining crushed berries and the remaining whole berries.

10. Serve with whipped cream.



Hint: You can double up the shortcake recipe but make the recipe twice vs doubling up the ingredients as tastes better.
