
Shortbread Cookies.
The rice flour makes all the difference.
INGREDIENTS: Makes 3 circles
- 3 cups of flour
- 2/3 cup rice flour
- 3/4 cup sugar
- 1lb unsalted butter
- 1 tsp salt
- Icing Sugar
Now Cook:
1. Place sugar in food pro for 30 seconds to make finer.
2. In large bowl add flours, sugar, salt. Cut butter into small squares and with fingers knead into flour.
3. Continue to knead until consistency of fine breadcrumbs.
4. Knead into softball shape (5-10 minutes). If pastry still too short, place in fridge until cold.
5. Lightly flour 3 9 inch pie plates and roll out dough into 3 nine inch circles.
6. Use knife to make lines and prick with fork.
7. Pre-heat oven to 300-325F and cook for 30 minutes (45 minutes at 300) or until golden brown.
8. Re-score shortbread and sprinkle with icing sugar.
