French Toast Sticks.


From Cru Restaurant in Manhatten.



INGREDIENTS: Serves 2

  • 2 large eggs plus one yolk
  • 1 pinch cinnamon
  • 1 pinch salt
  • Dash of amaretto
  • Butter
  • 2 tbs heavy cream
  • 1 pinch nutmeg
  • 2 drops vanilla extract
  • 4 slices brioche or other high quality white bread cut 1 inch thick
  • Maple Syrup
  • 4 fresh strawberries
  • dash of bourbon (optional)
  • dash of balsalmic vinegar (optional)

Now Cook:

1. Combine eggs, cream, seasonings and ameretto; lightly beat until smooth and blended.

2. Cut brioche slices into 1 by 3-4 inch sticks and roll them around in egg mixture until they are well coated.

3. Butter a skillet and warm over medium heat. When butter is melted and starts to froth, line up sticks of bread and brown on all sides.

4. While bread is cooking, warm maple syrup in a small pot. Adding a few drops of balsamic vinegar and bourbon to the syrup is a nice touch.

5. Cut the strawberries in half, placing two halves on each stick and drizzle with maple syrup.



Hint: Serve with good smoked bacon, yoghurt and fresh fruit.
