Corn Fritters.
INGREDIENTS: Serves 4
- 3 cups peanut oil for frying
- 1 cup sifted all-purpose flour
- 1 pinch salt
- 1 teaspoon baking powder
- 1 teaspoon sugar
- 1 large egg, lightly beaten
- ½ cup milk
- 1 tablespoon shortening, melted
- 1 (12 ounce) can whole kernel corn, drained
- Maple Syrup
- dash of bourbon (optional)
- dash of balsalmic vinegar (optional)
Now Cook:
1. Heat oil in a heavy pot or deep fryer to 365 degrees F.
2. Combine flour, baking powder, salt, and sugar in a medium bowl. Beat egg, milk, and melted shortening together in a small bowl. Stir egg mixture into flour mixture. Stir in corn.
3. Working in batches, drop fritter batter by spoonfuls using a ladel into the hot oil. Fry until golden.
4. Warm maple syrup in a small pot. Adding a few drops of balsamic vinegar and bourbon to the syrup is a nice touch.
5. Remove fritters with a slotted spoon and drain on paper towels.
Hint: Serve with good smoked bacon.
