Tzatziki.


This is an easy recipe to make great spicy tzatziki. It can also be used to add a dollup or two for a marinade. Great with lamb or chicken for dippage and of course as an appetizer with pita.



INGREDIENTS: Serves many

  • 1 carton of Icelandic Yoghurt like Skyr (Key as it is very thick and avoids having to strain regular yoghurt). Can be found in most stores
  • 4 garlic cloves
  • Juice of half a lemon
  • 1 tbs of white wine vinegar
  • 1 tbs olive oil
  • 2 tbs of finely chopped fresh dill
  • salt to taste

Now Cook:

1. Open up the yoghurt and if there is any liquid drain it out. Don't empty the container as you are going to put all the ingredients in it.

2. Peel the garlic and using a garlic press put the garlic into the yoghurt. Stir with a spoon to mix it in.

3. Chop the dill finely and and to the yoghurt and stir with a spoon to mix it in.

4. Add the vinegar and stir.

5. Add the olive oil and stir.

6. Sprinkle with salt and stir once more.

7. Put the lid back on the yoghurt and put in the frige for 4 hours or overnight. Lasts at least 1 week in the fridge.

8. Serve with pita which has been heated over the stove or BBQ.



Hint: You can also add grated cucumber to the recipe to make a classic Tzatziki but I find does not add much taste given the effort.
